Vanilla Pound Cake

A dense, buttery vanilla pound cake made rich with cream cheese and sour cream, all sugar free.

Ingredients

Dry

  • 2 1/4 cups blanched almond flour
  • 2 tbsp coconut flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt

Wet

  • 1/2 cup unsalted butter, softened
  • 3 oz cream cheese, softened
  • 3/4 cup granulated monk fruit sweetener
  • 4 large eggs, room temperature
  • 1/4 cup sour cream, room temperature
  • 2 tsp vanilla extract

Directions

  1. Heat the oven to 325°F. Grease a 9x5-inch loaf pan and line it with parchment paper, leaving overhang on the long sides.
  2. In a bowl, whisk the almond flour, coconut flour, baking powder and salt.
  3. In a large bowl, beat the butter, cream cheese and monk fruit with a hand mixer until pale and fluffy, about 3 minutes.
  4. Beat in the eggs one at a time, then the sour cream and vanilla. The mixture may look a little curdled, which is fine.
  5. Add the dry ingredients and mix on low just until smooth. Spread the batter in the pan.
  6. Bake 55 to 65 minutes, until golden brown, the top springs back when pressed and a toothpick in the center comes out with a few dry crumbs. Tent with foil after 35 minutes to keep the top from getting too dark.
  7. Cool in the pan 30 minutes, then lift out and cool completely, at least 1 more hour, before cutting into 12 slices.
Tip: Room temperature eggs, butter and cream cheese are the key. Cold ingredients will not cream together and the cake bakes up dense in the wrong way.
