Chocolate Zucchini Bread

A moist, chocolatey almond flour loaf that hides a full zucchini and has about 4 g net carbs a slice.

Ingredients

Dry

  • 2 cups blanched almond flour
  • 1/3 cup unsweetened cocoa powder
  • 2/3 cup granulated monk fruit sweetener
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt

Wet

  • 3 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 1/2 cups shredded zucchini, squeezed dry (about 1 medium)

Fold in

  • 1/3 cup sugar-free dark chocolate chips

Directions

  1. Heat the oven to 350°F. Grease a 9x5-inch loaf pan and line it with parchment paper, leaving overhang on the long sides.
  2. Shred the zucchini on the large holes of a box grater, then wrap it in a clean towel and squeeze out as much liquid as you can.
  3. In a large bowl, whisk the almond flour, cocoa, monk fruit, baking powder, baking soda, cinnamon and salt.
  4. In another bowl, whisk the eggs, melted butter and vanilla. Stir into the dry ingredients, then fold in the zucchini and most of the chocolate chips.
  5. Spread the batter in the pan, smooth the top and scatter the remaining chips over it.
  6. Bake 50 to 60 minutes, until the top is firm and a skewer in the center comes out clean or with a few moist crumbs. If the top darkens too fast, tent loosely with foil after 35 minutes.
  7. Cool in the pan 20 minutes, then lift out and cool completely on a rack before slicing into 12 pieces.
Tip: Squeezing the zucchini matters. Wet zucchini makes a gummy center that never quite bakes through.
