Blueberry Crumble Bars

A buttery almond shortbread base, jammy blueberry filling and crumbly topping, all from one dough.

Ingredients

Crust and crumble

  • 2 1/2 cups blanched almond flour
  • 1/3 cup granulated monk fruit sweetener
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg

Blueberry filling

  • 1 1/2 cups fresh or frozen blueberries
  • 2 tbsp granulated monk fruit sweetener
  • 1 tbsp lemon juice
  • 1 tbsp chia seeds

Directions

  1. Heat the oven to 350°F. Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides.
  2. In a saucepan over medium heat, cook the blueberries, 2 tbsp monk fruit and lemon juice, stirring and mashing some berries, until bubbling and juicy, 5 to 6 minutes. Stir in the chia seeds and set aside to thicken.
  3. In a bowl, stir the almond flour, 1/3 cup monk fruit, cinnamon and salt. Stir in the melted butter and egg until a crumbly dough forms.
  4. Set aside 1 cup of the dough. Press the rest firmly into the bottom of the pan.
  5. Bake the crust 12 minutes, until the edges are lightly golden.
  6. Spread the blueberry filling over the warm crust. Crumble the reserved dough over the top in small clumps.
  7. Bake 25 to 33 minutes more, until the crumble is golden brown and the filling bubbles at the edges.
  8. Cool completely in the pan, then chill 1 hour for the cleanest cuts. Lift out and cut into 16 bars.
Tip: Frozen wild blueberries work great. Cook them straight from frozen and add a minute or two until the filling is bubbling.
