Lemon Bars with Almond Shortbread Crust

Ingredients

Crust

  • 1 1/2 cups blanched almond flour
  • 1/4 cup granulated monk fruit sweetener
  • 1/8 tsp salt
  • 5 tbsp unsalted butter, melted

Lemon filling

  • 4 large eggs
  • 2/3 cup powdered monk fruit sweetener
  • 1/2 cup fresh lemon juice (about 3 lemons)
  • 1 tbsp finely grated lemon zest
  • 2 tbsp coconut flour

Garnish

  • 1 tbsp powdered monk fruit sweetener for dusting (optional)

Directions

  1. Heat the oven to 350°F. Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides.
  2. Stir the almond flour, granulated monk fruit and salt together, then stir in the melted butter until it looks like damp sand. Press firmly and evenly into the bottom of the pan.
  3. Bake the crust 12 to 15 minutes, until the edges are light golden. Let it cool at least 10 minutes while you make the filling.
  4. Whisk the eggs and powdered monk fruit until smooth. Whisk in the lemon juice, lemon zest and coconut flour until there are no lumps.
  5. Pour the filling over the crust. Bake 18 to 22 minutes, until the edges are set and the center barely jiggles when you nudge the pan.
  6. Cool to room temperature, then refrigerate at least 2 hours until firm.
  7. Lift out by the parchment, dust with powdered monk fruit if you like, and cut into 16 squares with a knife wiped clean between cuts.
Tip: Powdered monk fruit dissolves better than granulated in the filling, so the bars stay smooth instead of gritty. Keep them refrigerated.
