Tiramisu Cups

Individual tiramisu cups with coffee-soaked almond sponge, fluffy mascarpone cream and a dusting of cocoa.

Ingredients

Almond sponge

  • 1 cup blanched almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • 3 large eggs
  • 1/4 cup granulated monk fruit sweetener
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract

Coffee soak

  • 1/2 cup strong brewed coffee, cooled
  • 1 teaspoon instant espresso powder
  • 1 tablespoon granulated monk fruit sweetener

Mascarpone cream

  • 8 oz mascarpone, cold
  • 1 cup heavy cream, cold
  • 1/3 cup powdered monk fruit sweetener
  • 1 teaspoon vanilla extract

Finish

  • 1 tablespoon unsweetened cocoa powder

Directions

  1. Heat oven to 350°F. Line an 8 x 8-inch pan with parchment.
  2. Whisk the almond flour, coconut flour, baking powder and salt. In another bowl whisk the eggs, 1/4 cup granulated sweetener, melted butter and vanilla until frothy. Stir the wet into the dry.
  3. Spread in the pan and bake 15 to 18 minutes, until golden and springy and a toothpick comes out clean. Cool completely, then cut into 1-inch cubes.
  4. Stir the coffee, espresso powder and 1 tablespoon sweetener until dissolved.
  5. Beat the mascarpone, cream, powdered sweetener and vanilla on medium speed until thick and holding soft peaks, about 1 to 2 minutes. Do not overbeat or it turns grainy.
  6. Divide half the sponge cubes among 8 small glasses and drizzle each with about 1 1/2 teaspoons coffee soak. Top with half the mascarpone cream. Repeat the layers.
  7. Cover and chill at least 2 hours. Dust with cocoa through a small sieve just before serving.
Tip: Make these the night before. The sponge soaks up the coffee and the flavors settle in, just like a classic tiramisu.
