Carrot Cake Cupcakes with Cream Cheese Frosting

Moist, spiced carrot cake cupcakes with walnuts and a tangy cream cheese frosting, all sugar free.

Ingredients

Dry

  • 2 cups blanched almond flour
  • 2 tbsp coconut flour
  • 1/2 cup granulated monk fruit sweetener
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt

Wet

  • 3 large eggs
  • 1/3 cup unsalted butter, melted
  • 1/4 cup unsweetened almond milk
  • 1 tsp vanilla extract

Fold in

  • 1 cup finely grated carrot (about 2 medium)
  • 1/3 cup chopped walnuts

Cream cheese frosting

  • 6 oz cream cheese, softened
  • 3 tbsp unsalted butter, softened
  • 1/2 cup powdered monk fruit sweetener
  • 1 tsp vanilla extract

Directions

  1. Heat the oven to 350°F. Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk the almond flour, coconut flour, monk fruit, baking powder, cinnamon, ginger, nutmeg and salt.
  3. In a second bowl, whisk the eggs, melted butter, almond milk and vanilla. Stir into the dry ingredients until combined.
  4. Fold in the grated carrot and walnuts. Divide the batter evenly among the 12 liners, about 3/4 full.
  5. Bake 20 to 24 minutes, until the tops spring back when pressed and a toothpick in the center comes out clean.
  6. Cool 10 minutes in the tin, then move to a wire rack and cool completely, about 45 minutes.
  7. For the frosting, beat the cream cheese and butter until smooth, then beat in the powdered monk fruit and vanilla until fluffy, about 2 minutes.
  8. Pipe or spread the frosting on the cooled cupcakes. Refrigerate leftovers.
Tip: Grate the carrots on the small holes of a box grater. Fine shreds melt into the crumb, while thick ones stay crunchy and add moisture unevenly.
