A bread-free breakfast bake with savory sausage, peppers, mushrooms, spinach and cheddar. Feeds a crowd or a week of mornings.
Ingredients
Filling
- 1 lb ground breakfast sausage
- 1/4 cup diced onion
- 1 cup sliced mushrooms
- 1 red bell pepper, diced
- 2 cups baby spinach, chopped
Egg mixture
- 12 large eggs
- 1/2 cup 2% milk
- 1/2 tsp dried sage
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded sharp cheddar, divided
For the pan
- Cooking spray
Directions
- Heat the oven to 375°F. Coat a 9x13-inch baking dish with cooking spray.
- Brown the sausage in a large skillet over medium-high heat, breaking it up, 6 to 8 minutes, until no pink remains. Drain off most of the fat.
- Add the onion, mushrooms and bell pepper to the skillet and cook 4 to 5 minutes, until the mushrooms release their liquid. Stir in the spinach until wilted.
- Spread the sausage and vegetables in the baking dish and sprinkle with half the cheddar.
- Whisk the eggs, milk, sage, salt and pepper until smooth. Pour evenly over the filling and top with the remaining cheddar.
- Bake 30 to 35 minutes, until puffed, golden at the edges and the center is set (160°F on an instant-read thermometer).
- Rest 10 minutes before cutting into 8 squares.
