Velvety coffee-shop style egg bites with bacon and melty cheese, made in a regular oven with a simple water bath.
Ingredients
Egg bites
- 6 large eggs
- 1/2 cup 2% cottage cheese
- 1/2 cup shredded Gruyere, Swiss or sharp cheddar
- 1/4 tsp salt
- 1/8 tsp black pepper
- 4 slices cooked bacon, crumbled
- 1 tbsp chopped fresh chives
For the pan
- Cooking spray
- Hot water for the water bath
Directions
- Heat the oven to 300°F with one rack in the center and one below it. Set a baking dish on the lower rack and fill it halfway with boiling water. The steam keeps the bites silky.
- Coat a standard 12-cup muffin tin or silicone egg bite mold well with cooking spray.
- Blend the eggs, cottage cheese, shredded cheese, salt and pepper in a blender until completely smooth and slightly frothy, about 30 seconds.
- Divide the bacon and chives among the 12 cups, then pour in the egg mixture, filling each about two-thirds full.
- Bake on the center rack 25 to 30 minutes, until the centers are just set and spring back when touched.
- Cool 5 minutes, then loosen with a thin knife and pop them out. They keep 4 days in the fridge or 2 months frozen.
