Breakfast Burritos

Hearty scrambled egg, bacon, spinach and cheddar burritos wrapped in low-carb tortillas. Freeze a batch for busy mornings.

Ingredients

Filling

  • 8 large eggs
  • 2 tbsp 2% milk
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp unsalted butter
  • 1/2 red bell pepper, diced
  • 1/4 cup diced onion
  • 2 cups baby spinach
  • 6 slices cooked bacon, chopped
  • 3/4 cup shredded sharp cheddar

To wrap

  • 6 low-carb high-fiber tortillas (8 inch)
  • 6 tbsp jarred salsa, for serving

Directions

  1. Whisk the eggs, milk, salt and pepper in a bowl.
  2. Melt the butter in a large nonstick skillet over medium heat. Add the bell pepper and onion and cook 3 to 4 minutes, until soft.
  3. Add the spinach and stir until wilted, about 1 minute.
  4. Lower the heat to medium-low and pour in the eggs. Stir slowly with a spatula until softly set, 2 to 3 minutes. Remove from heat while still slightly moist and fold in the bacon.
  5. Warm the tortillas in a dry skillet or the microwave for 10 to 15 seconds so they fold without cracking.
  6. Divide the egg mixture among the 6 tortillas, sprinkle each with 2 tablespoons of cheddar, fold in the sides and roll up tightly.
  7. Toast seam side down in the skillet over medium heat 1 to 2 minutes per side until golden. Serve with salsa.
Tip: To freeze, cool the burritos completely, wrap each in foil and freeze up to 3 months. Unwrap, wrap in a damp paper towel and microwave 1 1/2 to 2 minutes, turning halfway.
