A crunchy mix of almonds, walnuts, pecans, pepitas, toasted coconut and sugar-free chocolate chips.
Ingredients
- 1/4 cup unsweetened coconut flakes
- 1/2 cup roasted almonds
- 1/2 cup walnut halves
- 1/2 cup pecan halves
- 1/4 cup pumpkin seeds (pepitas)
- 1/4 cup sugar-free dark chocolate chips
- 1/4 teaspoon ground cinnamon
- Pinch of salt
Directions
- Toast the coconut flakes in a dry skillet over medium-low heat, stirring constantly, 3 to 4 minutes, until golden at the edges. Tip onto a plate right away so it does not keep browning, and cool completely.
- In a medium bowl, toss the almonds, walnuts, pecans and pumpkin seeds with the cinnamon and salt.
- Add the cooled coconut and the chocolate chips and toss again.
- Portion into 9 small bags or containers of 1/4 cup each so a serving stays a serving.
- Store airtight at room temperature up to 2 weeks.
