Ingredients
Marinade
- 2 tablespoons olive oil
- 1/4 teaspoon dried Italian seasoning
- 1/8 teaspoon salt
- Black pepper to taste
Skewers
- 12 small fresh mozzarella balls (ciliegine)
- 24 cherry tomatoes
- 24 small fresh basil leaves
- 2 teaspoons balsamic vinegar
Directions
- In a small bowl, stir the olive oil, Italian seasoning, salt and pepper. Add the mozzarella balls, toss and refrigerate 30 minutes.
- Rinse the tomatoes and basil and pat completely dry.
- On each of 12 small skewers, thread a tomato, a basil leaf, a mozzarella ball, another basil leaf and a second tomato.
- Arrange on a platter and drizzle with the remaining herb oil from the bowl.
- Drizzle the balsamic vinegar over the top just before serving.
