Cucumber Hummus Bites

Cool cucumber rounds topped with hummus, cherry tomato, feta and fresh dill.

Ingredients

Base

  • 1 English cucumber

Toppings

  • 1/2 cup hummus
  • 10 cherry tomatoes, halved
  • 2 tablespoons crumbled feta
  • 1 tablespoon chopped fresh dill
  • Pinch of smoked paprika

Directions

  1. Slice the cucumber into 20 rounds about 1/2 inch thick. Trim off the ends first so the rounds sit flat.
  2. Lay the rounds on paper towels and pat the tops dry so the hummus stays put.
  3. Spoon the hummus into a zip-top bag, snip off a corner and pipe a small mound, about 1 1/4 teaspoons, onto each round. A small spoon works too.
  4. Press a cherry tomato half, cut side up, into each mound of hummus.
  5. Sprinkle with the feta, dill and a pinch of smoked paprika. Serve within 2 hours.
Tip: Make these close to serving time. Cucumbers release water as they sit and the hummus will start to slide.
