Coconut Cream Pie Cups

Silky coconut custard over a toasted almond coconut crumble, crowned with whipped cream and toasted coconut.

Ingredients

Crumble

  • 3/4 cup blanched almond flour
  • 2 tablespoons unsweetened shredded coconut
  • 1 tablespoon granulated monk fruit sweetener
  • 2 tablespoons unsalted butter, melted

Coconut custard

  • 1/3 cup powdered monk fruit sweetener
  • 1/2 teaspoon xanthan gum
  • Pinch of salt
  • 1 (13.5 oz) can full-fat coconut milk
  • 1/2 cup heavy cream
  • 4 large egg yolks
  • 1/2 teaspoon coconut extract
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened shredded coconut

Topping

  • 1/2 cup heavy cream, cold
  • 1 tablespoon powdered monk fruit sweetener
  • 2 tablespoons unsweetened shredded coconut, toasted

Directions

  1. Heat oven to 350°F. Mix the almond flour, 2 tablespoons coconut, granulated sweetener and melted butter. Spread on a parchment-lined baking sheet with the 2 tablespoons topping coconut in a separate pile.
  2. Bake 8 to 10 minutes, stirring once, until the crumble is golden and the coconut pile is toasted. Watch the coconut closely. Cool.
  3. Whisk the powdered sweetener, xanthan gum and salt in a saucepan. Slowly whisk in the coconut milk and 1/2 cup cream. Heat over medium until steaming.
  4. Whisk the egg yolks in a bowl, then whisk in 1/2 cup of the hot mixture in a thin stream. Whisk the yolks back into the pan.
  5. Cook over medium-low, whisking constantly, 4 to 6 minutes, until thick enough to coat a spoon and 170°F. Do not boil.
  6. Off the heat, stir in the coconut extract, vanilla and 1/2 cup shredded coconut. Cool 15 minutes.
  7. Divide the crumble among 8 small glasses and press lightly. Spoon the custard on top, cover and chill at least 3 hours.
  8. Whip the cold cream with 1 tablespoon powdered sweetener to soft peaks. Top each cup with whipped cream and a pinch of toasted coconut.
Tip: Shake the can of coconut milk hard before opening so the cream and liquid are evenly mixed.
