Three-Ingredient-Style Peanut Butter Cookies

Soft, flourless peanut butter cookies made from peanut butter, egg, monk fruit and a splash of vanilla.

Ingredients

  • 1 cup natural creamy peanut butter (no sugar added), well stirred
  • 1/2 cup granulated monk fruit sweetener
  • 1 large egg
  • 1 tsp vanilla extract

Directions

  1. Heat the oven to 350°F. Line a baking sheet with parchment paper.
  2. In a medium bowl, stir the peanut butter, monk fruit, egg and vanilla until completely smooth and thick, about 1 minute. If your peanut butter is very runny, chill the dough 10 minutes so it holds a shape.
  3. Roll the dough into 14 balls, about 1 1/2 tablespoons each, and set them 2 inches apart on the sheet.
  4. Flatten each ball with a fork, then press again in the other direction to make a crisscross pattern.
  5. Bake 10 to 12 minutes, until the edges just start to brown. The centers will still look soft.
  6. Cool completely on the pan, about 20 minutes, before lifting them off. They are fragile while warm and set as they cool.
Tip: Use a natural peanut butter whose only ingredients are peanuts and salt, and stir the oil back in well. Dip the fork in a little monk fruit between cookies so it does not stick.
