Almond Flour Chocolate Chip Cookies

Ingredients

Dough

  • 6 tbsp unsalted butter, melted and slightly cooled
  • 1/2 cup brown monk fruit sweetener
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 2 cups blanched almond flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup sugar-free dark chocolate chips

Topping

  • Flaky salt for sprinkling (optional)

Directions

  1. Heat the oven to 350°F. Line a large baking sheet with parchment paper.
  2. In a medium bowl, whisk the melted butter and brown monk fruit until smooth, about 30 seconds. Whisk in the egg and vanilla.
  3. Add the almond flour, baking soda and salt. Stir with a spatula until a soft, thick dough forms, then fold in the chocolate chips.
  4. Scoop 16 level tablespoon-size balls (a 1 1/2 tbsp cookie scoop works well) onto the sheet about 2 inches apart. Press each one to about 1/2 inch thick, since almond flour dough does not spread much.
  5. Bake 10 to 12 minutes, until the edges are golden and the centers look just set but still soft.
  6. Sprinkle with flaky salt if you like. Cool on the pan 10 minutes so they firm up, then move to a wire rack.
Tip: Let the melted butter cool for a few minutes before adding the egg so it does not scramble, and do not skip the 10 minute rest on the pan or the cookies will crumble.
