Spinach Feta Frittata

A golden, herb-flecked frittata packed with spinach and salty feta that goes from stovetop to oven in one skillet.

Ingredients

Eggs

  • 8 large eggs
  • 1/4 cup 2% milk
  • 1 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Filling

  • 1 tbsp olive oil
  • 1/2 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 5 oz baby spinach
  • 3 oz feta, crumbled (about 1/2 cup)
  • 2 tbsp chopped fresh dill or parsley

Directions

  1. Heat the oven to 375°F with a rack in the middle.
  2. Whisk the eggs, milk, oregano, salt and pepper in a bowl until frothy.
  3. Heat the olive oil in a 10-inch oven-safe skillet over medium heat. Add the onion and cook 4 to 5 minutes, until soft. Add the garlic and cook 30 seconds.
  4. Add the spinach a handful at a time, stirring until wilted, about 2 minutes. Spread the vegetables evenly across the pan.
  5. Pour in the eggs, then scatter the feta and herbs over the top. Cook without stirring 2 to 3 minutes, until the edges begin to set.
  6. Move the skillet to the oven and bake 10 to 12 minutes, until the center is just set and no longer jiggles.
  7. Let it rest 5 minutes, then loosen the edges with a spatula and cut into 6 wedges.
Tip: Pull it while the center is barely set. Carryover heat finishes it, and an overbaked frittata turns rubbery and weeps.
