Shrimp Cauliflower Fried Rice

Takeout-style fried rice made with cauliflower rice, juicy shrimp, scrambled egg and crisp vegetables in under 30 minutes.

Ingredients

Fried rice

  • 2 tbsp avocado oil, divided
  • 1 1/4 lb large raw shrimp, peeled and deveined
  • 3 large eggs, beaten
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced carrot
  • 4 green onions, sliced, whites and greens separated
  • 3 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 1/2 lb riced cauliflower (about 6 cups)

Sauce

  • 3 tbsp low-sodium soy sauce
  • 1 tsp toasted sesame oil
  • 1/4 tsp black pepper

Directions

  1. Pat the shrimp dry. Heat 1 tablespoon avocado oil in a large wok or 12-inch skillet over medium-high heat. Cook the shrimp 1 to 2 minutes per side, until pink. Move to a plate.
  2. Add the beaten eggs to the hot pan and scramble 1 minute, until just set. Add to the plate with the shrimp.
  3. Add the remaining oil, bell pepper, carrot and green onion whites. Stir-fry 3 to 4 minutes, until crisp-tender. Add the garlic and ginger and cook 30 seconds.
  4. Add the cauliflower rice and spread it out. Cook 5 to 6 minutes, stirring only every minute or so, until tender and lightly toasted with no liquid left in the pan.
  5. Stir in the soy sauce, sesame oil and pepper. Return the shrimp and eggs and toss 1 minute to heat through.
  6. Top with the green onion tops and serve.
Tip: Use a big pan and high heat, and don't stir constantly. Cauliflower rice is mostly water, and it only tastes fried when that water cooks off.
Dad jokeI tried to make fried rice without rice. It was a shrimply amazing idea.
