Beef and Broccoli Stir-Fry

Tender strips of seared steak and crisp broccoli in a glossy garlic ginger sauce, served over cauliflower rice. Faster than takeout.

Ingredients

Sauce

  • 3 tbsp low-sodium soy sauce
  • 1/3 cup low-sodium beef or chicken broth
  • 1 tbsp brown monk fruit sweetener
  • 1 tsp toasted sesame oil
  • 1 tsp rice vinegar
  • 1/4 tsp xanthan gum

Stir-fry

  • 1 1/4 lb flank or sirloin steak, sliced thin against the grain
  • 2 tbsp avocado oil, divided
  • 5 cups broccoli florets
  • 3 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1/4 tsp red pepper flakes
  • 2 green onions, sliced
  • 1 tsp sesame seeds

To serve

  • 4 cups riced cauliflower

Directions

  1. Whisk the soy sauce, broth, monk fruit, sesame oil and vinegar in a small bowl. Sprinkle in the xanthan gum while whisking so it does not clump. Set aside.
  2. Slice the steak into 1/4-inch strips against the grain. Pat dry with paper towels.
  3. Heat 1 tablespoon avocado oil in a large wok or 12-inch skillet over high heat until shimmering. Sear the beef in two batches in a single layer, 1 to 2 minutes per side, until browned. Move to a plate.
  4. Add the remaining oil and the broccoli with 2 tablespoons of water. Cover and cook 2 to 3 minutes, until bright green and tender-crisp.
  5. Uncover, add the garlic, ginger and red pepper flakes and stir-fry 30 seconds.
  6. Return the beef, pour in the sauce and toss 1 to 2 minutes, until glossy and slightly thickened.
  7. Meanwhile, microwave the riced cauliflower covered 4 to 5 minutes, or sauté until tender. Serve the stir-fry over it and top with green onions and sesame seeds.
Tip: Freeze the steak 20 minutes before slicing. It firms up so you can cut thin, even strips, and thin strips stay tender.
