Low-Sugar Nut Granola

Crunchy clusters of almonds, pecans, pumpkin seeds and coconut, lightly sweetened with monk fruit and baked low and slow.

Ingredients

Nuts and seeds

  • 1 cup sliced almonds
  • 1 cup pecans, roughly chopped
  • 1/2 cup walnuts, roughly chopped
  • 1/2 cup pumpkin seeds (pepitas)
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup ground flaxseed

Binder

  • 1 large egg white
  • 3 tbsp coconut oil, melted
  • 1/4 cup brown monk fruit sweetener
  • 1 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Directions

  1. Heat the oven to 300°F. Line a large rimmed baking sheet (about 18 by 13 inches) with parchment.
  2. Combine the almonds, pecans, walnuts, pumpkin seeds, coconut and flaxseed in a large bowl.
  3. In a small bowl, whisk the egg white until foamy, then whisk in the melted coconut oil, monk fruit, cinnamon, vanilla and salt.
  4. Pour the wet mixture over the nuts and stir until everything is evenly coated.
  5. Spread on the baking sheet in an even layer and press down firmly with a spatula so clusters form.
  6. Bake 22 to 28 minutes, rotating the pan halfway, until golden brown and fragrant. Watch the last 5 minutes since nuts scorch quickly.
  7. Cool completely on the pan without stirring, at least 30 minutes, so it crisps. Break into clusters and store airtight up to 2 weeks.
Tip: Do not stir it while it bakes or cools. The egg white glues the nuts into clusters, and leaving it alone is what makes the big crunchy chunks.
Dad jokeI asked my granola why it was so crunchy. It said it was just trying to keep it together under pressure.
