Greek Chicken Sheet Pan Dinner

Lemon oregano chicken thighs roasted with peppers, red onion, zucchini and tomatoes, then finished with feta and Kalamata olives.

Ingredients

Marinade

  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp Dijon mustard
  • 2 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Sheet pan

  • 1 1/2 lb boneless skinless chicken thighs
  • 2 bell peppers, cut into 1-inch pieces
  • 1 medium zucchini, cut into half moons
  • 1 red onion, cut into wedges
  • 1 1/2 cups cherry tomatoes
  • 16 Kalamata olives, pitted
  • 3 oz feta, crumbled
  • 2 tbsp chopped fresh parsley

Directions

  1. Whisk the olive oil, lemon juice, garlic, mustard, oregano, salt and pepper in a large bowl. Add the chicken and turn to coat. Marinate 15 minutes, or up to overnight in the fridge.
  2. Heat the oven to 425°F. Line a large rimmed baking sheet with parchment.
  3. Lift the chicken out of the marinade and arrange it on the pan. Toss the peppers, zucchini, red onion and tomatoes in the leftover marinade and scatter them around the chicken in a single layer.
  4. Roast 25 to 30 minutes, until the chicken is browned and reads 175°F and the vegetables are tender and charred at the edges.
  5. Scatter the olives and feta over the pan and roast 3 minutes more, just to warm the feta.
  6. Sprinkle with parsley and serve with the pan juices spooned over.
Tip: Thighs stay juicy at 175°F where breasts would dry out, which makes them the forgiving choice for a hot sheet pan.
