Almond Crusted Chicken Parmesan

Crispy oven-baked chicken cutlets in a Parmesan almond crust, topped with marinara and bubbly mozzarella.

Ingredients

Chicken

  • 2 large boneless skinless chicken breasts (about 1 lb), halved horizontally into 4 cutlets
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 large egg
  • 1 tbsp water

Crust

  • 2/3 cup blanched almond flour
  • 1/3 cup grated Parmesan
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Olive oil spray or cooking spray

Topping

  • 1 cup no-sugar-added marinara
  • 1 cup shredded part-skim mozzarella
  • Fresh basil, for serving

Directions

  1. Heat the oven to 425°F. Set a wire rack on a rimmed baking sheet and coat the rack with cooking spray.
  2. Pound the cutlets to an even 1/2-inch thickness between sheets of plastic wrap. Season both sides with salt and pepper.
  3. Beat the egg with the water in a shallow dish. In a second shallow dish, mix the almond flour, Parmesan, Italian seasoning and garlic powder.
  4. Dip each cutlet in egg, let the extra drip off, then press firmly into the almond mixture to coat both sides. Set on the rack and spray the tops lightly.
  5. Bake 15 to 18 minutes, until golden and the chicken reaches 165°F.
  6. Spoon 1/4 cup marinara over each cutlet and top with 1/4 cup mozzarella. Bake 5 to 7 minutes more, until the cheese is melted. Broil 1 to 2 minutes for browned spots if you like.
  7. Top with basil and serve with a green salad or roasted vegetables.
Tip: The wire rack lets hot air reach the bottom of the chicken so the crust stays crisp all the way around instead of steaming on the pan.
