Double Chocolate Muffins

Bakery-style chocolate muffins loaded with sugar-free chocolate chips, about 4 g net carbs each.

Ingredients

Dry

  • 2 cups blanched almond flour
  • 1/2 cup unsweetened cocoa powder
  • 2/3 cup granulated monk fruit sweetener
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp instant espresso powder (optional, deepens the chocolate)
  • 1/4 tsp salt

Wet

  • 3 large eggs
  • 1/3 cup unsalted butter, melted
  • 1/2 cup sour cream
  • 1/4 cup unsweetened almond milk
  • 1 tsp vanilla extract

Fold in

  • 1/3 cup sugar-free dark chocolate chips, divided

Directions

  1. Heat the oven to 350°F. Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk the almond flour, cocoa, monk fruit, baking powder, baking soda, espresso powder and salt, breaking up any cocoa lumps.
  3. In another bowl, whisk the eggs, melted butter, sour cream, almond milk and vanilla.
  4. Stir the wet ingredients into the dry until no dry streaks remain, then fold in about two thirds of the chocolate chips.
  5. Divide the batter among the 12 liners and press the remaining chips onto the tops.
  6. Bake 18 to 22 minutes, until the tops spring back when lightly pressed and a toothpick in the center comes out clean (melted chocolate on it is fine).
  7. Cool 10 minutes in the tin, then move to a rack.
Tip: Sift or whisk the cocoa well. Cocoa lumps do not break up in thick almond flour batter and leave dry pockets.
