Zucchini Lasagna

Thin zucchini planks layered with meaty marinara, herbed ricotta and mozzarella. Every bit of lasagna comfort, no noodles.

Ingredients

Zucchini

  • 4 medium zucchini, sliced lengthwise 1/8 inch thick
  • 1/2 tsp salt
  • Cooking spray

Meat sauce

  • 1 lb 90% lean ground beef
  • 1/2 medium onion, diced
  • 2 cloves garlic, minced
  • 2 1/2 cups no-sugar-added marinara
  • 1 tsp Italian seasoning

Cheese layers

  • 1 1/2 cups part-skim ricotta
  • 1 large egg
  • 1/4 cup grated Parmesan
  • 2 tbsp chopped fresh parsley
  • 1/4 tsp black pepper
  • 2 cups shredded part-skim mozzarella, divided

Directions

  1. Heat the oven to 400°F. Line two baking sheets with parchment, lay the zucchini slices in a single layer, sprinkle with the salt and let sit 10 minutes. Blot well with paper towels.
  2. Spray the tops lightly and bake 10 to 12 minutes, until softened and slightly dry. This pre-bake keeps the lasagna from turning watery. Lower the oven to 375°F.
  3. Brown the beef with the onion in a large skillet over medium-high heat, 7 to 8 minutes. Add the garlic for the last minute, drain the fat, then stir in the marinara and Italian seasoning and simmer 5 minutes.
  4. Mix the ricotta, egg, Parmesan, parsley and pepper in a bowl.
  5. Spread 1/2 cup meat sauce in a 9x13-inch baking dish. Layer one-third of the zucchini, half the ricotta mixture, one-third of the remaining sauce and 1/2 cup mozzarella. Repeat once. Finish with the last of the zucchini, the remaining sauce and 1 cup mozzarella.
  6. Cover with foil and bake 25 minutes. Uncover and bake 20 to 25 minutes more, until bubbly and browned on top.
  7. Rest at least 15 minutes before cutting into 8 squares so the layers hold together.
Tip: Don't skip salting and pre-baking the zucchini. It pulls out about a cup of water that would otherwise end up in the bottom of your dish.
