Creamy no-cook peanut butter oats boosted with chia, flax and hemp so a smaller scoop of oats keeps you full until lunch.
Ingredients
Oats
- 3 tbsp old-fashioned rolled oats
- 1 tbsp ground flaxseed
- 1 tbsp chia seeds
- 1 tbsp hemp hearts
- 1/2 cup plus 2 tbsp unsweetened almond milk
- 1 tbsp natural peanut butter (no sugar added)
- 1 tsp granulated monk fruit sweetener
- 1/4 tsp vanilla extract
- Pinch of salt
Topping
- 2 tbsp fresh raspberries
Directions
- In a 12 to 16 ounce jar, stir the almond milk, peanut butter, monk fruit, vanilla and salt until the peanut butter is mostly blended in.
- Add the oats, flaxseed, chia seeds and hemp hearts. Stir well, then press the oats down so they are fully covered with liquid.
- Cover and refrigerate at least 6 hours or overnight. The chia and oats will soak up the liquid and turn thick and creamy.
- Stir in the morning, adding a splash of almond milk if it is too thick. Top with the raspberries and eat cold.
