Garlic Cauliflower Mash

Silky, buttery mashed cauliflower with a whole head's worth of flavor from steamed garlic and Parmesan.

Ingredients

Cauliflower

  • 2 lb cauliflower florets (about 1 large head)
  • 4 cloves garlic, peeled

Mix-ins

  • 2 tablespoons unsalted butter
  • 2 oz cream cheese, softened
  • 2 tablespoons heavy cream
  • 1/4 cup grated Parmesan
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh chives

Directions

  1. Set a steamer basket in a large pot with 1 inch of water and bring to a boil.
  2. Add the cauliflower florets and garlic cloves, cover and steam 12 to 15 minutes, until a knife slides through the thickest stems with no resistance.
  3. Drain well, then spread on a towel lined sheet pan for 2 minutes to let excess steam escape. Less water means a creamier, less soupy mash.
  4. Transfer the cauliflower and garlic to a food processor. Add the butter, cream cheese, heavy cream, Parmesan, salt and pepper.
  5. Blend 1 to 2 minutes, scraping the sides, until very smooth. Pulse just a few times instead if you like it a little chunky.
  6. Spoon into a serving bowl and top with chives. Serve hot.
Tip: Steaming beats boiling here. Boiled cauliflower soaks up water and makes a runny mash.
Dad jokeI served cauliflower mash at Thanksgiving and nobody noticed. It was a real mashterpiece of disguise.
