Melt-in-your-mouth dark chocolate ganache truffles rolled in cocoa, made with just a few ingredients.
Ingredients
Ganache
- 1 1/4 cups sugar-free dark chocolate chips
- 1/2 cup heavy cream
- 1 tablespoon unsalted butter, softened
- 1/2 teaspoon vanilla extract
- Pinch of salt
Coating
- 3 tablespoons unsweetened cocoa powder
Directions
- Put the chocolate chips in a medium heatproof bowl.
- Heat the cream in a small saucepan until it just begins to simmer at the edges. Pour it over the chocolate and let stand 3 minutes without stirring.
- Add the butter, vanilla and salt and stir slowly from the center out until smooth and glossy.
- Cover and refrigerate about 2 hours, until firm enough to scoop.
- Scoop 20 level tablespoons and roll quickly between your palms into balls. If they get sticky, chill 10 minutes.
- Roll each ball in the cocoa to coat. Store covered in the fridge and let stand 10 minutes before serving.
