Chili Lime Edamame

Shelled edamame seared in a hot skillet and tossed with chili, lime and flaky salt.

Ingredients

Edamame

  • 2 cups frozen shelled edamame, thawed and patted dry
  • 1 teaspoon avocado oil

Chili lime seasoning

  • 1/2 teaspoon chili powder
  • 1/8 teaspoon cayenne pepper (optional)
  • Zest of 1 lime
  • 1 tablespoon lime juice
  • 1/2 teaspoon flaky sea salt

Directions

  1. Thaw the edamame in a colander under cool running water, then pat very dry with a towel.
  2. Heat the avocado oil in a large skillet, preferably cast iron, over medium-high heat until shimmering.
  3. Add the edamame in a single layer and let it sit 2 minutes without stirring to blister. Stir and cook 3 to 4 minutes more, until hot and spotted with brown.
  4. Turn off the heat. Sprinkle with the chili powder and cayenne and toss 30 seconds so the spices toast in the pan.
  5. Transfer to a bowl. Add the lime zest, lime juice and flaky salt and toss. Serve warm or at room temperature.
Tip: Prefer them in the pod? Boil 1 pound frozen edamame in pods for 4 minutes, drain and toss with the same seasoning. Eat the beans and discard the pods.
